I fancied something light and summery now the weather is getting better…and fingers crossed it is here to stay!

So I love a quiche, and am always doing veggie ones, and thought something light, with some more flavour, so here is my smoked salmon and watercress tarts.

 

INGREDIENTS

40-50g smoked salmon

20g watercress (not the stalks)

2 eggs

150ml double cream

50ml milk

75g grated cheese, gruyere or cheddar works well

Seasoning
